Sardine brandade

An original brandade by @l.atelier.des.papilles

For 4 people, you will need:

- 1 jar of sardines
- 1kg of potatoes
- 2g of EKI mixture
- 3 cloves of pink garlic
- salt
- 80g of olive oil recovered from sardines
- 450g of milk
- 40g of breadcrumbs
- 50g grated Ossau Iraty cheese

Drain the sardines, reserving the oil and removing the central bone.
Peel and cut the potatoes into pieces, cook them in the milk.
Blend the garlic with the EKI mixture and the olive oil. Once the potatoes are soft, mash them more or less according to taste, add salt and add the oil to the garlic.
Roughly crush the sardines with a fork and add them to the mashed potatoes.


Preheat the oven to 200°. Place the brandade in a gratin dish, sprinkle with breadcrumbs and grated Ossau Iraty cheese.


Bake for 15-20 minutes and serve immediately.
