Tuna Burger
The 100% comfort, 100% gourmet and 100% Basque recipe! by @l.atelier.des.papilles
For 2 burgers, you need:
-450g of firm-fleshed potatoes
-30g of butter
-1 shallot
-2 eggs
-100g of tuna
-1 tuna and tomato terrine @conserveriejeandeluz
-40g of breadcrumbs
-15ml of Espelette pepper mustard
-1 pinch of Espelette pepper
-Salt
-2 slices of Ossau Iraty
Preheat the oven to 210°C.
Peel the potatoes and grate them. Pour in the melted butter and mix.
Form 4 grated potato pancakes.
Place the pancakes on a baking sheet covered with baking paper and cook for 40 to 45 minutes.
Chop the shallot, mix all the ingredients and leave to stand for 15 minutes.
Mold 2 pancakes with this preparation. Heat a little olive oil in a frying pan and brown the pancakes over medium heat for about ten minutes.
Assemble the burgers, using the potato patties as bread, add the tuna steak and the slice of Ossau Iraty and bake for 10 minutes.
