The star of Jean de Luz from the Saint Jean de Luz fish auction!

These sardines have reached adult size and are fished in winter in the Bay of Biscay using bolinche method (near the coast). They are larger and less fatty than the sardines usually found.

The sardines are prepared by hand using the oldest method dating back to 1804 (the time of the "Penn Sardin"): they are first salted then dried for 3 days before being put raw, by hand, in a glass. This way, they retain all their flavor. They are not fried, which makes them easier to digest.

The organic olive oil comes from a small mill in Navarre, south of Pamplona. It is prepared with Empeltre variety olives.

The Espelette pepper AOP and Bio comes from a small farm not far from Espelette. The Castanchoa brothers (Biper Gorri) have taken over a family farm, producing and processing Espelette pepper with passion. The quality of their work has been rewarded several times at the general agricultural competition in Paris, earning them the prize for excellence in 2018 and 2019.

Sardines, organic extra virgin olive oil, a pinch of salt, organic Espelette pepper and that's it!

No additives, no coloring, no other nonsense!

A 270g jar is equivalent to about 2.5 standard cans. It's resealable and can be stored for 1 month after opening in the refrigerator.
